Marinated Grilled Chicken

It's FINALLY here! The (unofficial) start of SUMMER! Thankfully it's also stopped raining, which means everyone will be out for a BBQ at some point this weekend! And THIS is the perfect recipe!

This super simple chicken marinade is quick and easy, and can even be prepped overnight! Packed with anti-inflammatory spices like turmeric and coriander. Plus olive oil which is a healthy fat, that lowers blood pressure, supports the body's absorption of vitamins, and can help prevent a heart attack! And apple cider vinegar which is great for regulating blood sugar and can even help weight loss (hello summer body!). 

Whatever your plans are for this holiday weekend, I hope you'll give this recipe a shot. You can even use it as a quick weeknight dinner! Served over rice with a fresh salad - it's the perfect balanced meal.

Marinated Chicken
Serves 6

1.5 lbs. chicken breast, sliced into cutlets (you can use chicken pieces as well - this will change your cooking time)
1 C. salsa (whatever heat level you prefer)
1 Tbs. olive oil
1.5 Tbs. apple cider vinegar
1.5 tsp sazon spice mixture (or 1 packet of store-brought mix)
2 Tbs. chopped, fresh, cilantro (optional, for serving)

For the Sazon Mix
2 tsp. cumin
1.5 tsp. dried oregano
2 tsp. coriander
1.5 tsp onion powder
1.5 tsp. garlic powder
1 Tbs. annatto (or use turmeric)
1 tsp. salt

Mix the spices together and store in an airtight container. 

For the Marinade:
Combine salsa, olive oil, apple cider vinegar and 1.5 teaspoons salon mix in a blender and puree until smooth. 

Place chicken in a zip bag, pour marinade over the chicken. Seal the bag and then use your hands to make sure each piece of chicken is coated in marinade. Lay the bag on a flat surface for at least 30 minutes before grilling. 

*You can prep the chicken the night before and let it rest overnight in the marinade in the refrigerator for even more flavor! 

Grill the chicken until cooked through, about 5-6 minutes per side, depending on the thickness of the piece. Top with fresh cilantro and serve hot!
