Grilled Peaches

I don't know if you've been eating those Jersey peaches this Summer...but they have been AMAZING! Super sweet and delicious - so I just had to incorporate them into a dish! And grilled peaches are a favorite with my friends and family!

Mostly because they're so easy, and SO delicious! Plus they're really impressive when plated up with vanilla ice cream or whipped cream! Which means you look like an entertaining genius while not having done a whole lot of work!

Peaches are loaded with Vitamins A and C - plus fiber which means they help move along digestion, aiding in weight loss AND, they can actually help regulate blood sugar! Which makes them a great dessert even when you're trying to keep it healthy! 

This tends to work best with peaches that are JUST under-ripe. They hold up better on the grill and the heat softens them the rest of the way through. Just slice in half and twist (much like an avocado) and then pull out the pit. Coat with some olive oil and sear on the grill.

Grilled Peaches
Serves 4

4 peaches
olive oil
whipped cream or ricotta or ice cream for serving
Fresh mint leaves, for serving

Heat the grill (or grill pan) over high heat.

Halve the peaches and remove the pit. Pour some olive oil into a shallow dish. Coat the cut side of the peaches in olive oil by simply dunking them in. 

Place the peaches, cut side down, on the grill. Allow to cook for about 2-3 minutes. Rotate 90° and grill another 2-3 minutes for "x" shaped grill marks. 

Remove peaches from the grill, place on small plates and top with ice cream or whipped cream and fresh mint. Serve warm.
