I'm sharing their recipe for Tequila Shrimp which is great for the warmer weather. Immunity boosting pineapple helps cut the heat of a smokey chipotle pepper. While fresh shrimp bring healthy fats and proteins, as well as a taste of summer!

Tequila Shrimp
Serves 4

2 Tbs. olive oil
1/2 small, red, onion - chopped
1 chipotle pepper in adobo, chopped
1 15 oz. can diced tomato
1 lb. medium shrimp, peeled & deveined
1/4 C. pineapple, chopped
1 Tbs. tequila
1/4 C. chopped, fresh cilantro

Heat oil over medium-high heat. Add onion and chipotle pepper and saute' for 3-5 minutes, until the onion begins to soften. 

Add in tomatoes and bring to a simmer. Season with salt & pepper. Add in shrimp and cook until shrimp become opaque, about 5 minutes.

Remove the pan from the heat, add in the pineapple and tequila. Top with fresh cilantro and serve with rice.
