One Dish Wonder - Baked Eggs

1/2 package frozen, chopped spinach
1/2 of 1 15 oz. can chopped tomatoes
1 small can mushrooms
2 chicken & apple sausage links, sliced
1 pint egg whites OR 10-12 whole eggs
Preheat oven to 350°.
Prepare a deep baking dish by coating it with cooking spray. Then add in the spinach.
Spoon tomatoes and mushrooms on top of the spinach. Then layer on sausage slices.
If using whole eggs, scramble them. Pour eggs or egg whites over dish.
Baked for 20 minutes or until eggs are set.
Cut into squares and serve. Or allow to cool, cover well and refrigerate. Store in the fridge for up to a week. Reheat in the microwave throughout the week.
