Bucket & Bay's Homemade Hot Gelato Sandwich:
Makes 1 sandwich

This Hot Gelato Sandwich could be made with your favorite jam or preserves.  Since it's strawberry season, we've used macerated fresh strawberries in this version.

1 croissant
6-8 fresh, ripe strawberries
2 tbs. organic cane sugar
1 tbs. tawny port (optional)
1 tsp. fresh squeezed lemon juice
1-2 scoops Bucket & Bay Vanilla Gelato (or your favorite vanilla ice cream)

Pre-heat the oven to 325° (or toaster oven)

Chop strawberries and place in a bowl. Add sugar, port and lemon juice to berries. Mix, and set aside.

Slice the croissant, but not all the way through, creating a clam shell. Toast the croissant in oven for about 5 minutes, just until warmed through.

Scoop 2-3 tablespoons of strawberry mixture onto the croissant, then add vanilla gelato.
