Whole30 Days 24-25

I was pretty amazed that I was able to stick with this plan through Saturday. We had been out late the night before, and had a dentist appointment in the morning. And we slept until the last possible second. So we never had coffee or anything before our appointment. By the time we were done we were starved and stopped at a local Colombian spot. I was sure there was going to be nothing on the menu that fit the plan - and I was pleasantly surprised. There was ONE dish that cut it. Their Huevos Rancheros. Fried eggs over sautéed potatoes and a piece of chorizo on the side. Done and done! 

 

In sticking with the theme for the day, hubby asked for more sancocho for dinner. It was the perfect day for it because it was cold and blustery and just gross. I headed to the store for our weekly shopping. My frustration with grocery shopping in this area is, not every store has EVERYTHING I need. One store will carry yucca but not platano. Another will have the green plantains, but not the yellow ones. And the one that has both doesn't necessarily have the best quality. In the interest of not doing a driving tour of Essex and Passaic Counties I just went to the store with best selection and ok quality.

I started on the soup as soon as I got home, only this time I omitted the corn since we're not supposed to eat that (I didn't realize that the first time.) Don't you know the soup isn't as good without it. I was so annoyed. Don't get me wrong, it's still good - it's just not AS good. So if you make it on Whole30, my new advice is make it with the corn, then just don't eat the corn! HA!

As for Sunday - well, Sundays are always special to me but I was in love with this Sunday. We started shooting our Thanksgiving series...and my kitchen came ALIVE! Fall baking, Thanksgiving side dishes, the smell was incredible. The oven warmed the whole place up perfectly and I was in my element. I was SO happy to be making those foods again. More than my stomach missed them, my heart did! I'm a fall baby, this is my season and I have missed pumpkin baked goods and fall spiced flavors. (If you haven't already, make sure you're subscribed on YouTube so can catch those episodes.) I totally cheated, but I was happy as could be. I already know what my first dish will be when this is over, sweet potato ravioli in a browned butter sage sauce.
