We’re getting things rolling again here in the Cucina with a really special episode we shot exclusively for Groundwork Elizabeth! Last year we had an AMAZING time at our Urban Farm Dinner - and this year - well, like everything this year, we had to re-think it! So, here’s what we came up with!

The awesome team over at Urban Griddle will be using ALL the produce the Micro Farm has to prep an incredible meal for those who purchased tickets. That includes this dish; their fan favorite, pig candy (aka candied bacon)! Those folks also got early access to this video so they could cook along at home! They’ll be picking up their dinner boxes on Saturday, November 7th at the Micro Farm behind Elmora Library - which also includes dessert and a cocktail!

After the dinner is over though - we’re certainly encouraging people to continue supporting Groundwork Elizabeth, as well as our local restaurants like Urban Griddle! I get it. I’m the FIRST one to pinch pennies when my income slows, feels threatened, or stops altogether! But for those who CAN - supporting Groundwork, especially now, means they can continue to grow and provide fresh, healthy food to the local community. It means students can still come and learn (btw, if you’re desperate to get your kids out of the house, they take farm volunteers! Just saying’!). It means families without outdoor space of their own can grow in the community garden. And so much more!

It’s been a weird year to say the least - BUT - I feel like this Urban Farm Dinner is just one awesome example of the way people have started thinking outside of the box. And hopefully by next Fall, we can invite you all back to the Micro Farm for a “pre-COVID style” dinner! Check out the video and grab the recipe below!

Pig Candy
Serves 4

8 slices thick cut bacon
1/4 C. maple syrup
1/4 C. dark brown sugar

*wooden skewers

Preheat the oven to 325°. Place the bacon in a single layer on a cookie sheet. Bake for 20 minutes.

Place the syrup and sugar in separate plates - long and deep enough for a piece of bacon to fit inside.

Remove from the oven and allow to cool enough to handle. Push the skewers through the center vein of fat in the bacon.

Heat a skillet over medium-high heat. Place the bacon skewers in the skillet. Heat for 5 minutes on each side until crispy in spots but still tender.

Dunk each skewer in the maple syrup, allowing any excess to drip off. Then dunk in the brown sugar, gently shaking off any excess.

Place skewers on a platter and serve.
