Om Sweet Home's "Pasta con Ceci" with Brooklyn Buttah

Pasta con Ceci
Serves 6

1/2 stick Brooklyn Buttah
1/4 onion, chopped
3 cloves of garlic, chopped
1 sprig fresh thyme
1/4 c. nutritional yeast
1/4 c. full fat coconut milk
pinch of turmeric
pinch of cayenne (or red pepper flakes)
1 tsp. salt
1 lb. zucchini "noodles"
1 15oz. can ceci beans
15 grape tomatoes, halved

Heat a large pan over medium-high heat. Add in the buttah and cook until melted and starting to bubble.

Add in onion and sauté for 3-5 minutes. Add garlic and thyme and cook for 1 minute more.

Stir in nutritional yeast until smooth. Then pour in coconut milk.  Season with turmeric, cayenne and salt.  Allow the sauce to cook for another 2-3 minutes to let the flavors combine.  If you feel it's too thick, add more coconut milk.

Remove the sprig of thyme.  Add in the ceci beans, zucchini noodles and tomatoes and toss to coat. Finish with another pat of buttah and a sprinkle of nutritional yeast.  Serve hot.
