Fried Zucchini Flowers
Makes 2 dozen pieces

2 dozen zucchini flowers
1 c. flour
1 tsp. salt
1 egg
1 c. seltzer water
canola oil for frying

Wash the blossoms well. If you wish, remove the stamen (inner part of the flower). If there are small zucchini attached, remove them and cut into "fries."

Heat about an inch of canola oil in a deep pan over medium-high heat.

Combine flour, salt, egg and seltzer water so a thin batter forms.

Dip each flower in the batter, allow excess to drip off. Carefully place in hot oil. Fry until golden. Use a slotted spoon to remove from oil and drain on a paper towel lined plate. Sprinkle with salt and serve warm.
