Cavatelli Con Broccoli Rabe

1 lb. cavatelli
1 bunch broccoli rabe, cleaned, rough stems cut off
10-12 cloves of garlic, peeled and minced
3/4 c. olive oil
2 tbs. butter
2 tbs. red pepper flakes
1/4 c. parmeggiano
salt & pepper

 

Bring a large pot of water to a boil.  Meanwhile, prepare an ice bath and place bowl next to pot.  

Pour olive oil and butter into a large pan. Place over low heat. Add garlic and allow to cook while preparing broccoli rabe.

When water is boiling, add broccoli rabe and blanch for just about a minute. Remove from water and place in ice bath.  When all the broccoli rabe has been blanched, drain and set aside.

Bring a second pot of SALTED water to a boil.

Add red pepper flakes to oil and garlic mixture.

Cook pasta in salted water until just al dente. Reserve 1 cup of pasta water. Add cooked pasta to olive oil and toss to coat. Add in broccoli rabe, parmeggiano and salt & pepper to taste. Toss again and leave over low heat for another minute or two until everything is heated through. Serve warm with an extra drizzle of fresh olive oil and sprinkle of cheese.
