The Seeing Eye

As we officially kick off Summer - Beth Nydick joins us again to show us a beautiful, sunset colored cocktail! Beth explains that this drink got it’s name because of it’s carrot juice base. Carrots are notoriously good for your eye health, but as Beth jokes, a few too many and you’ll be seeing double!

Adding to the sweet side is some apple juice or cider, whatever you prefer. Which is then balanced with ginger and lime - both amazing for your digestion! Once again Beth delivers a flavorful drink that strikes the perfect balance between loving a healthy lifestyle and still living life!

Make a bunch of these and watch the sun go down on the longest day of the year! Then “Salute” to Summer and “cheers” to many more delicious nights!

The Seeing Eye
Serves 2

Recommended Barware:
Rock Glasses

4-5 coins of fresh ginger, peeled
4 oz. apple juice or cider
4 oz. carrot juice
4 oz. gin
Ice
Lime & fresh ginger for garnish

Muddle ginger in the bottom of a shaker.

Add remaining ingredients and ice. Shake until your hands get cold.

Garnish 2 rock glasses with lime and ginger. Fill each glass with ice and strain contents of shaker over ice.

*Mixologists note: Top the drink with a splash of seltzer and/or a squeeze of lime!
