Turkey Meatballs with Elite Lifestyle Cuisine

I was invited to Fairview New Jersey to hang out with celebrity chef Carlo Filippone at his kitchen for Elite Lifestyle Cuisine. ELC offers prepared meals for the health conscious crowd - which I think is all of us at this point. But he does it with dishes that are familiar favorites! An Italian-American like myself, Carlo grew up around cooking and food and ultimately combined his two passions in life - working out and eating!

While one would think those two things go against one another, the truth is, a healthy lifestyle starts in the kitchen. What you eat, more than anything, is critical to how you look and feel! It's a lesson Carlo learned on his journey and put into practice at ELC. Now, he's sharing that with his clients, offering them the opportunity to stop by on a busy weeknight and pick up dinner, or meal plans that will have them covered for 3 square a day, 7 days a week! And everything in between. The shop also sells supplements and coffee drinks if you need a pick-me-up.

Carlo was kind enough to share his turkey meatball and sauce recipe with me so if you can't make it to the shop to grab one of his meals - you can make this right at home! ELC Turkey Meatballs & Sauce
Serves 6

For the Meatballs:
1lb. ground turkey breast meat
1 egg
1 1/2 tbs. grated parmesan
2 tbs. Italian seasoned breadcrumbs
1/2 tbs. fresh parsley, chopped
1/4 c. chopped onion
2 garlic cloves, chopped
1 tsp. ground black pepper
2 tsp. salt

For the Sauce:
1/2 c. extra virgin olive oil
1/8 c. chopped onion
2, 20 oz. cans crushed tomato
2 cloves garlic, smashed
6-7 fresh basil leaves
pinch of oregano
salt & pepper to taste

In a large sauce pot, heat olive oil over medium-low heat. Add in onion and cook until translucent, about 3-5 minutes.

Add in crushed tomato and stir. Cover and bring to a simmer. Allow to simmer for about 20 minutes.

While the sauce simmers, make the meatballs. In a large bowl, combine turkey meat, egg, cheese, breadcrumbs, parsley, onion, garlic, salt & pepper. Using your hand, mix until well combined. Form into meatballs (you should get about 6 meatballs).

Drop the meatballs carefully into the sauce. Stir gently so as to not break them up, but make sure they are covered by the sauce. Cover the pot again and allow to simmer for 20 minutes.

Add the garlic, basil, oregano, salt and pepper to the sauce. Cover and continue cooking for an additional 10-15 minutes. 

Serve warm over brown rice or whole wheat pasta.
