Crunchy Ceci Beans

I will literally eat my body weight in ceci beans. I LOVE them! And when I want a salty, crunchy snack, these are the PERFECT healthy fix! Not to mention they're SO easy to make! I like to make them in big batches so we can snack on them for a few days (they literally only last a few days!).

The basic version is just olive oil and salt. But I'm also sharing with you a Mediterranean Spice version! I'll snack on these too but I LOVE them over a salad, or in a grain bowl. They just add this amazing flavor punch! Definitely try both versions and let me know which one you like best in the comments section below!

Basic Crunchy Ceci Beans
makes one, 15 oz. can

1, 15oz. can ceci (garbanzo) beans
2 tsp. olive oil
1 tsp salt

Preheat oven to 400°. 

In a small bowl, combine ceci, oil and salt. Mix well until the beans are evenly coated.

Line a cookie sheet with foil. Spread the beans in an even layer on the cookie sheet and roast for 15 minutes. After 15 minutes, give the pan a good shake to move the beans around a bit. Return to the oven and continue cooking another 15 minutes.

Remove the beans from the oven and check for doneness. They should be a darker brown color and sound almost hollow inside when you shake the pan.  Allow the beans to cool slightly. Serve immediately, or store in an airtight container for up to a week. 

Mediterranean Spiced Ceci
makes one, 15oz. can

1, 15oz. can ceci (garbanzo) beans
2 tsp. olive oil
1 tsp. salt
1/2 tsp. cumin
1/2 tsp. corriander
1/2 tsp. smoked paprika
1/4 tsp. tumeric
pinch of chili powder
