Salmon Sliders

Salmon Sliders
makes about 12-15 sliders

1 lb. salmon fillet, skin & bones removed
1/2 c. mayonnaise
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. cumin
1 tsp. smoked paprika
salt & pepper
12 mini buns
For Serving:
lettuce
red onion
tomato

Preheat the broiler. Line a cookie sheet with foil and spray with cooking spray. Season salmon with salt & pepper on both sides and place on cookie sheet. Spray salmon with cooking spray.

Broil salmon for 8-10 minutes or until it becomes opaque and flaky.

While the salmon is cooking combine mayonnaise, garlic powder, onion powder cumin and smoked paprika in a small bowl and mix. 

Slice the mini buns in half and spray the interiors with cooking spray. Place the buns under the broiler for about a minute until they become golden brown.

Use a sharp knife to cut the salmon fillet into small pieces that will fit on the mini buns. 

Layer each bun with a piece of salmon, lettuce, tomato and red onion. Spread a spoonful of aioli on the lids and press them onto the sliders. Secure with toothpicks.
