One Dish Wonder Chicken Dinner
1 large baking potato, sliced
1/2 bag chopped, frozen, spinach
1/2 16 oz. can diced tomatoes (or fresh)
1 small can mushrooms (or fresh)
4 thin sliced chicken breasts
1/2 c. seasoned bread crumbs
salt & pepper
Preheat oven to 350°. Spray baking dish with cooking spray.
Layer potato slices in bottom of pan. Season with salt & pepper to taste.
Next layer on the spinach, tomatoes and mushrooms. Top with chicken breast.
Sprinkle each piece of chicken with breadcrumbs. Place dish in oven and cook for 30-45 minutes, depending on the thickness of your chicken. (You can also tell if it's done when a fork easily goes through the potatoes on the bottom.)
Serve chicken alongside mixed roast veggies!
