Whole30, Day 2

Welp, nothing like breaking news to derail a diet. (I'm still not sure if that pun is intended or not.) 
So Day 2 started out pretty good, and I was planning on spending the afternoon prepping the food for the rest of the week, unfortunately the train accident happened in Hoboken and I was called in to work my freelance job. I grabbed an apple and some almond butter for a snack but had NO idea what I would do for dinner. I'll tell you, being prepped is KEY for this to work. Because all the things that I would normally grab for a quick meal, even a healthy one, are off limits! 

Lunch today: Mashed sweet potato with fall spices and roasted grapes.

By the time I left work and got to BergenFest, a networking event I was scheduled to be at, I was really hungry and gave in to eating the food that was available. Tastings of latkes, pasta, and a waffle with Nutella to top it off. I couldn't have gone further off the plan! But I'm someone who's prone to "hanger" and I was not about to subject people (or myself) to that.
I'm scheduled to work early the next morning and breakfast has been pretty easy for me with this since we typically eat eggs with veggies anyway. I just leave my usual toast out. Hopefully I'll get some food prepped tomorrow after work.

Breakfast: egg over easy with seasoned potatoes
Lunch: baked sweet potato with fall spices and roast grapes
Snack: apple with almond butter
Dinner: mini latke, pasta, mozzarella, sugar waffle with Nutella and banana
