Whole30, Day 22

All I can think about is all the things I plan to eat on Day 31! My husband is dying to know when he can have avocado toast again. The few people that I spoke with before I started this, swear up and down they loved it. One woman even told me she plans to KEEP eating this way. I am not sold. But I'm pretty sure I have a deeper love for food than most people. 

 

Today was basic, and boring. That might be my other problem...I am BORED on this diet. As someone who cooks, and who LOVES to cook...I am limited, and I hate it. 

Our breakfast staple has been eggs. This is a Colombian dish called perico, eggs with peppers (or tomato) and onions.

Eggs for breakfast. Then headed up to my Mom's to spend some time with family. She says I'm a pain in the ass on this diet - and for her I am. Nothing makes my mother happier than feeding her family - and if she can't find something to feed us with, well, her whole day is shot. Thankfully she had sausage and peppers leftover in the fridge. That was my lunch (no bread, of course) and some clementines as a snack. 

 

I headed home to make dinner for MY family and decided to do the Sausage, Apple, Kale Skillet dish again - mostly because everyone liked that. Come to find my brother-in-law ate all the apples (teenaged boys can eat, this one likes to eat healthy, he's killing me) - so I threw the last 2 pears in there instead. Worked just as well. The pears were very ripe so they were even sweeter than apple. After dinner I was craving dessert so hubby and I split a bowl of banana with almond butter - at which point I was asked when we could have ice cream again! Next week my love, next week.

Breakfast: scrambled egg, 1/2 avocado, salt, red pepper, lemon

Lunch: chicken sausage with peppers and onion

Snack: clementines

Dinner: Sausage, Apple, Kale skillet (but with pears).
